unfortunately Apple has removed/forgotten the UI to manage these Finder extensions in Sequoia. Try this terminal command:
pluginkit -e ignore -i com.hegenberg.BetterTouchTool.BTTFinderContextMenu
or if you are using setapp:
pluginkit -e ignore -i com.hegenberg.bettertouchtool-setapp.BTTFinderContextMenu
