Custom Finder Context Menu Items with SF Symbols don't contrast in dark mode

Describe the bug

With the new 'Custom Finder Context Menu Items' feature, when using an icon 'From SF Symbols' for a 'Context Menu Item' (eg. doc.text), with dark mode enabled, the icon appears black rather than a light/contrasting colour like I would have expected.

Affected input device (e.g. MacBook Trackpad, Magic Mouse/Trackpad, Touch Bar, etc.):

I haven't double checked this against any alpha versions yet.

Yes, I'm noticing the same thing in Sequoia 15.2.1 and latest BTT. M1 MacBook Pro 2020 (w/ Touch Bar)
